Are espresso pods real coffee?
Yes! A pod is a pre-portioned, ready-tamped disc of fresh-ground espresso coffee pressed between two sheets of bonded filter paper and packaged in individual nitrogen flushed packages. In fact, the just-roasted beans enter a controlled atmosphere even before they are ground.

How does the freshness of pods compare to beans that are ground just before use?
Pod machines use large capacity conical mill grinders, which reduce the heat generated from continuous grinding with flat plate mills. The consistency and quality of the grind is usually better than most coffee houses can produce — that is, assuming the coffee is ground just before use. More typically, in many restaurants ground coffee sits in the grinder/doser for hours or even days before it is all used.

What about the dosing and tamping?
Pods are consistent in weight and are tamped at forty pounds per square inch. Such consistency is rare to non-existent in hand-tamped dosages.

Don't pods cost more than whole beans?
The raw cost is 18-24 cents more than for whole beans. But if you consider the waste from poorly pulled shots, the training time and expense for a barista to become proficient, the continual re-calibration of the grinder — let alone the grinder’s $500+ cost (times 2 if you offer decaf), and the lost sales due to server hesitancy, most restaurants and cafes looking to produce a quality drink 20 to 30 times a day (at an average price of $2.50 or more) could justify the expense.
